Chateau Carbonnieux
The chateau was originally built during the troubled times of the Hundred Years' War, and was often at the heart of turbulent local history. Carbonnieux has a microclimate that is extremely conducive to winegrowing - excellent gravelly soil on the slopes near the Garonne River that see a natural temperature regulation from its proximity to the city of Bordeaux. Carbonnieux is early-maturing and not especially prone to spring frosts.
A month-long skin contact before fermentation creates concentration and structure that intends a bit of aging before drinking. Juice stays in barrel about 8-9 months after fermentation. Carbonnieux has long been famous for its whites, but by producing both red and white Graves for several centuries, it has kept the chateau alive and well through even the most difficult of Europe's winemaking periods.
