Chiroulet (By Thunevin)
According to Philippe: "a great wine is like a piece of music, the more
notes there are, the more beautiful the symphony".
It is thus that the young wine producer started composing the
master vine
of future red blends, in the key of Merlot.
When it comes to white wine, Philippe Fezas quickly understood
that the
great wines in France come from chalky soil.
He therefore chose the "Peyrusquet", a chalky outcrop called
"Retzine",
for producing white wines with a floral and mineral
profile.
The first bottles were quickly lauded by worldwide wine critics. The Grande Reserve expresses old-vine Merlot grapes grown in fine clay soil, but old-vine Tannat also
has a say in this wine.
The dry white wine, Les Terres Blanches, showcases the soil with floral and mineral
characteristics, different
from the light, lively “generic” wines of Gascony. The fact that it is matured on the lees for over 10 months in large wooden casks, and due to the high proportion of Gros Manseng, a
structuring
grape, the Terres Blanches has a fuller, richer body and a longer aging capability.
