It is said that to make great wine, the vine has to suffer. The high density of vines per hectare (6000) produces intense vegetative competition and fewer bunches of grapes. Grassy rows balance nourishment to the vine. Strict late winter pruning and thinning out of bunches during the thirty days preceding the harvest are essential for obtaining perfect grapes. At harvest time, only the finest whole bunches, collected in 20-kilo boxes, will be used for winemaking.
