Potinet-Ampeau is based in Monthélie, and mainly produce beautiful Meursaults. They harvest early to preserve acidity, practice low-temperature fermentation and minimal bâtonnage, so the juice rests on its lees. The wines can hang out for a long time, and just get more and more graceful with age.
