07 Red 'Squid's Fist'
The Sangio was split into small 1 - 2 tonne ferments post destemming and
light crushing (leaving approximately 60% whole berries). Ferments
were either left to ferment at their own due course, or inoculated
(50:50 split). The Sangio ferments saw anywhere up to 23 days on skins,
mode of cap management - punch downs....The wine was pressed to oak for
malo and maturation. The Shiraz is a blended parcel from a few little
conditions ensued, ca. 7 days on skins before pressing, settling, malo
and then transfer into neutral oak for maturation.

Rosehips and fresh cherries, a hint of tar and leather gives it a lovely rusticity.
